Many of us believe that if we eliminate fat and high cholesterol foods from our diets, we will be healthy and lose weight. This is a huge misconception. Instead of eliminating fat completely from the diet, you should consume healthy fats in moderation while eliminating unhealthy fats from your diet. Unhealthy fats are associated with obesity and heart disease. Healthy fats actually lower the risk of heart disease.

Cholesterol has been mislabeled as a cause of heart disease. Many believe that they should limit their intake of foods that contain cholesterol. Dietary cholesterol is different than blood cholesterol. Dietary cholesterol comes from the foods we eat such as eggs, seafood, and meat. But our body also makes cholesterol in the liver.

Carrier proteins called lipoproteins dissolve the cholesterol in blood and transport it to all parts of the body. Cholesterol is needed to make vitamin D, form cell membranes, and is the precursor to many hormones. Limiting dietary intake makes the liver produce more cholesterol. This in turn can cause unhealthy levels of low density lipoproteins (LDL’s) to high density lipoproteins (HDL’s).
