Brussel sprouts are a very healthy vegetable. The brussel sprout is a variety of the cabbage family. Early Dutch gardeners produced a number of new vegetables by selectively breeding with wild cabbage.

Brussel sprouts are rich in vitamin C. In fact, the brussel sprout contains almost twice as much vitamin C as the orange, if raw. However, to maintain the most nutritional use of the brussel sprout is to juice it. If you do cook them, try steaming them in very little water. This means the water is boiling before they are put in.

The remaining water from boiling can be used for soup or in a gravy. Remember, there is some nutritional content in that water. Why throw vitamins and minerals from the brussel sprouts down the sink? Juice from the brussel sprout is used with runner or string bean juice to treat diabetes in adults.
