How do low carb diets impact dietary vitamins and your health?

There is much controversy when it comes to the safety of a low carb diet. Conflicting studies and fuzzy interpretation of information are confusing the masses. Are low carb diets safe to follow?

Some of the more popular low carb diet plans are the South Beach and Atkins. These experts believe that high consumption of carbohydrates in the diet leads to obesity, diabetes, and other health problems. Most critics argue that lack of exercise and high consumption of calories from any source leads to obesity. Those following a low carb diet may be lacking grains, fruits, and vegetables that can lead to deficiencies in fiber, vitamin C, folic acid, and other vitamins and minerals.

Following a low carb diet for a short duration proves no adverse effects. However, following a low carb diet for a short duration may not show adverse effects due to the short time period. But what adverse effects can show up after following a low carb diet for a longer duration?
